An oven or cooker thermostat controls the temperature inside the oven cavity by simply switching the power on or off to the element within about +/-10-15% of the set temperature.
There are also often control and safety thermostats which operate in a similar manner but do tend to be preset to a single temperature, for example, to cut the oven off should it overheat.
When an oven thermostat is faulty there are generally one of two symptoms presented, either the oven will not heat at all or it will constantly heat and not cut out with the usual complaint being that everything is burning in the oven.
Oven thermostats carry live mains power and should not be worked on while power is applied to the oven or cooker.
